Folklore tells that this famous festival dish was invented in the 16th century by nuns of the convent of the state of Puebla. A tender boneless breast of chicken, smothered in a rich dark sauce made of dried chiles (mulato, pasilla, and ancho), ground nuts, seeds, spices, and unsweetened chocolate, all blended and simmered for hours.
